Just ask Nelsyn Hernandez who has dedicated himself to perfecting various processing techniques at the farms he owns and manages through her company called Cafe Fatima. This particular lot comes from her 45-acre farm located in Tarrazú Santa Maria de Dota. The natural processed coffee is an example of precisely executed methods of drying coffee, which eliminates the need to use water and greatly reduces the environmental impact, while at the same time, producing an expressive cup profile.
Processing Details
This natural processed coffee is an example of precisely executed processing, starting with sorting and floating cherries to remove any damaged coffee. Next the cherries are moved to the patio to dry. The drying is finished with a mechanical drier to ensure precise control in reducing the moisture to 11 percent.
